How Do You Control Substrate Moisture and Humidity in Commercial Morel Farming?

Moisture in commercial morel farming is managed at three separate points: the substrate as it leaves the mixer, the air inside the fruiting environment, and the fruit body after harvest. In practice, growers hold substrate moisture at 60–65% during mixing, keep air humidity inside the working range of their climate system (about 70–98% RH in a modern cabin), and dry harvested mushrooms to below 12% moisture for storage or export. Get these three right and most contamination, stalling and yield problems simply do not appear.

Morel mycelium is far less forgiving of water than button mushroom or oyster mycelium. Substrate that is too wet goes anaerobic, smells sour within days and invites competitors; substrate that is too dry never fully colonises, and the bags sit half-white while the calendar runs out. The goal is not "as wet as possible" but stable, evenly distributed moisture that the mycelium can move through without suffocating.

A workable workflow looks like this, and each step has a measurable checkpoint:

• Test raw material before mixing — squeeze a handful; it should hold shape without water running out, then let the mixer bring the whole batch to a uniform 60–65%. • Run a full 5–8 minute cycle in an industrial mixer sized to the farm (4–12 m³, 800–3,000 kg per batch). Short cycling leaves dry pockets that sterilise unevenly and contaminate weeks later. • Bag straight after mixing. In the External Nutrition Bag (ENB) method developed in Sichuan in 2000, a separate nutrition bag is placed against the colonised substrate bag rather than blended in, which keeps substrate moisture stable while still feeding the mycelium. • Sterilise at 105, 115 or 121 °C according to substrate and bag format, and let bags cool fully before inoculation. • Move bags into the fruiting environment and let the controller — not the calendar — decide when to mist.

For mixing itself, a properly sized substrate mixer is the cheapest humidity insurance a farm can buy. Machines in the 4–12 m³ range with a 5–8 minute cycle and accurate water dosing remove the single biggest source of batch-to-batch variation: humans guessing how much water to add.

Inside the growing room, an edible mushroom IoT smart cabin in a 20FT or 40FT container holds 4–28 °C to within ±0.5 °C, 70–98% relative humidity and CO2 between 400 and 2,000 ppm, with remote monitoring so a grower can check conditions from a phone. The value is not the setpoint alone but the stability: morels react to swings, and a cabin that corrects humidity in minutes rather than hours prevents the wet-dry cycle that cracks pins and opens early fruit.

Humidity is best added as fog, not spray. Ultrasonic micro-fogging units producing 3–10 µm droplets at 12–30 L/h raise relative humidity while the droplets stay airborne and evaporate, instead of landing on fruit bodies and creating wet spots where bacteria start. Fogging is also far easier to automate than hand watering.

Outdoor and semi-outdoor fields need the same discipline with fewer controls. UV-stabilised shade netting at 75%, 85% or 90% shading (HDPE with 3% UV additive, 5–8 year service life) reduces evaporation and heat load, and irrigation is best done early morning or late afternoon so water has time to move into the bed before the hottest hours. The institute's outdoor demonstration fields at Anxian and Luojiang — more than 50 hectares in total — are managed on exactly this pattern.

Finally, log the numbers. Record temperature, relative humidity and CO2 at least twice daily, keep sensors calibrated, and watch for unexplained humidity spikes; in morel rooms they usually precede contamination rather than follow it. A written log turns a lucky crop into a repeatable process.
