How Many Workers Does a Commercial Morel Mushroom Farm Really Need?

A commercial morel farm of one hectare usually needs around 15 to 25 people when substrate work, sterilization and climate control are done by hand — but the same area can be run with roughly 3 to 6 people once the heavy, repetitive steps are automated. Labour is normally the largest recurring cost in Morchella production, and it is the easiest cost to attack. The practical answer: automate mixing, bagging and sterilization first, then let climate IoT take over monitoring, and keep your people for inoculation, casing, quality control and harvest.

Most growers are surprised by how unevenly the work is distributed. Bagging alone can consume more working hours per day than harvesting, and it is the stage most sensitive to human error: inconsistent bag weight and density show up later as uneven colonization and patchy fruiting. Manual bagging also creates a staffing problem — a large crew is needed for a few weeks and then not at all.

• Substrate mixing and bagging: the most mechanisable stage, and the first place to spend money. • Sterilization loading and unloading: heavy physical work, best solved with drive-in autoclaves and forklifts. • Inoculation and spawn handling: still largely skilled manual work, so keep experienced hands here. • Climate monitoring: repetitive but critical, and now largely handled by IoT controllers and alarms. • Harvesting, trimming and drying: hard to automate, seasonal, and where a trained crew pays for itself.

For the first category, the External Nutrition Bag (ENB) method was invented in Sichuan in 2000, and the equipment built around it has matured through four generations. The current ENB Automatic Nutrient Bagging Machine runs at 30–50 bags per minute (1,800–3,000 bags per hour), fills 300 g to 1,000 g per bag, and draws only 1.5 kW at 220 V/50 Hz. It weighs about 380 kg and, by the manufacturer's own comparison, replaces the output of 15–25 workers — which is why it is usually the first machine a new commercial farm buys.

Behind the bagger sits the batching side. An Automated Substrate Batching and Bagging Production Line comes in 2, 4, 6 and 8 m³ configurations and can reach 15,000–100,000 bags per day under PLC control, with reported labour cost reductions above 80% versus manual lines. Sterilization is the second labour trap. High-pressure autoclaves rated at 105, 115 or 121 °C, with chambers up to 76 m³ and forklift drive-in loading, remove most of the manual carrying and stacking; 304 or 316 stainless steel options suit stricter cleaning standards. The payoff is fewer people handling hot, heavy loads and a more repeatable sterilization cycle.

Climate work is where automation quietly removes a whole shift.
